Make fun food to put in the cooler. Everything is often about easy or convenience – sometimes too often. Do not be afraid to invest a little time or effort into prepping fun food to bring on the road trip. Plan a menu that is enjoyable. Each day can be different. Fun does not always mean complicated. For example, if we are making a sandwich, we make sure to have our favorite German-rye bread. We have to plan ahead to buy this bread. It is not something we have every day. This rich dark rye adds something special.
Breakfast can be a freshly baked Healthy and Delicious Zucchini Bread. It is so perfect with a nice roasted cup of coffee from a local shop. Because it is a road trip on the Mediterranean Diet, I might add a few pieces of dark chocolate chips making this healthy loaf a special treat.
My mother-in-law, one of our favorite road trip companions, looks forward to the trip just for the my Virginia Style Crab Cakes. Delicious on a fresh whole grain bun with Dijon mustard it is served cold. It is hard to wait until the lunchtime stop to have it.
