Simple Heirloom Tomato Sauce

A Simple Sauce from Heirloom Cherry Tomatoes

I love using this simple sauce from heirloom cherry tomatoes for a variety of dishes. Sometimes I use it chunky, other times I process it down smoothly. One time, I made a vegetable frittata and spread some of this rainbow tomato sauce on top for a hearty topping. The textures and flavors of this velvety sauce keep inspiring me to find new uses for it.

Heirloom tomatoes are simply a tomato made with seeds. They are not genetically modified. Instead, the seeds are passed down from season to season. The pollination occurs naturally yielding tomatoes with unique shapes and colors. Being able to buy a pint of rainbow cherry tomatoes grown from various heirloom seeds is amazing. Each tomato is bursting with a slightly different flavor.

I find that cherry tomatoes last considerably longer in the refrigerator than other varieties of tomatoes. That is one reason this sauce works so well for my lifestyle. If I come home late for work, and do not have time to prepare what is on the menu I can whip this up in a few minutes. Add some pasta, presto, I have a dinner my Sweetheart loves. Clearly, I am crazy for this sauce. I wrote an entire post about heirloom rainbow cherry tomatoes, if you only have grape or cherry tomatoes, feel free to substitute. It is a wonderful way to have a fresh sauce in a few minutes. Fresh is always better than from a can.

Flexible is Good!

The key to making this sauce is to remember, there is not a right way to make it. Because you will have different shapes, sizes and colors of tomatoes, it will be different each time you make it. If your tomatoes do not yield enough juicy goodness to produce the amount of sauce you need, feel free to add a little prepared tomato sauce or more Roma tomatoes. You will still have a lovely taste of sweetness from the fresh cherry tomato sauce. Sometimes I add Italian Seasoning, sometimes garlic, sometimes not, it depends on how I plan to use the sauce. I may put the all of sauce in my blender and froth it up if I want a smoother consistency. Usually, I just leave it chunky, with the occasional tomato skin intact here and there.

How to Make this Easy Sauce

I have read many other recipes and it involves peeling, boiling and roasting. This cherry tomato sauce is a one-pan-quick-and-to-the-point delicious recipe. As a helpful hint, the only tool I will suggest is a sturdy masher. I like to use the pampered chef mix’n chop. It truly is the best tool to crush those little burst of rainbow tomato flavors right there in the pan without loosing any of the juice or working too hard!

Seriously, this simple sauce from heirloom rainbow tomatoes has been life changing for me. When I am late from work, with nothing prepped for dinner, I know I can make any number of delicious meals using this sauce and my Sweetheart will be happy. I can top pasta, or make a quick-baked veggie dish, or even make breakfast for dinner with a sauce topped frittata and a glass of white wine. This sauce is quick, the recipe is adaptable and the sauce makes everything everything better.

Simple Heirloom Tomato Sauce

Ingredients

3 containers of baby heirloom tomatoes, sliced in half
3 Roma Tomatoes, rough chopped
2 tablespoons tomato paste
1/2 teaspoon Kosher salt
2.5 tablespoons extra-virgin olive, divided
Red pepper flakes (to taste)
Seasonings as desired (garlic powder, Italian seasoning are two I use).

Instructions

Coat a large thick bottomed non-stick skillet with half the olive oil and heat to medium high. An enameled cast-iron Dutch oven also works well. Add the cherry tomatoes, sprinkling with all of the Kosher salt. Cover with a lid and sauté until tomatoes are soft.

While the cherry tomatoes are cooking down, blend the Roma tomatoes until frothy. Set aside.

When the cherry tomatoes are soft, crush the tomatoes in the skillet using a heat resistant masher to reach the desired consistency. Add the blended Roma tomatoes, tomato paste and remaining olive oil. Bring to a boil and then reduce the heat. Add any desired seasoning. Simmer until thick, about 8 minutes.
