An easy meal idea perfect for breakfast. The Easy Egg Wrap with Greens is delightfully compliant with the Mediterranean Diet. Like most wraps it is easy to eat on the go. This is not a recipe, but a simple meal idea perfect for breakfast. I love it because it is really easy to put together on a busy weekday morning. It feels decadent and healthy to eat it while being filling.

My favorite part of this egg wrap is using a flavored extra virgin olive oil.

I have friends and family who mistakenly believe that meal preparation on the Mediterranean Diet has to be complex. While food on this way of eating is certainly whole and fresh, it can also be easy and quick. For the same amount of time it would take you to swing into the local, fast-food restaurant, you can prepare an Easy Egg Wrap with Greens. Carry this meal out the door in a napkin with your coffee, pack it in a lunch bag or enjoy it curled up on the couch watching your favorite cooking show on a Saturday morning.

Clearly this is not a “recipe” and is easy to modify in a variety of ways. I use freshly boiled just barely hard eggs because I love the creamy richness of the warm egg. Down to a science, I place the eggs in a small pot and turn the burner on high. I set the timer for 20 minutes. After my shower, I pour out the boiling water, add the cold, and put together the rest of the wrap. By the time I am ready for the egg, it has cooled enough to peel. Wrapping up my breakfast, I walk out the door to work.

If I know the day will be crazy, I can make the eggs the night before. It takes longer to pick up a breakfast sandwich than it is to make the Easy Egg Wrap with Greens. It is tastier, easier and in the long run, more affordable!

Switch up the Easy Egg Wrap with Greens by changing the types of greens used, replace feta with goat cheese, and for a vegan option, add sautéed tofu instead of an egg! Ingredients

2 eggs, hardboiled
2 large whole wheat flat bread wrap (Chapati), store-bought or homemade
5 handfuls of your favorite lettuce or mixed greens
2 teaspoons of extra-virgin olive oil
2 tablespoon of Feta, from a block, crumbled
Season to taste with black pepper and a non-salt herbal-blend seasoning.

Instructions

Hard boil the eggs. Note: This can be done 3-5 days in advanced and kept unpeeled in the fridge. I prefer to boil mine freshly each morning. Fill a pan with with my eggs covered in an inch of water. Turn the burner on high, set a timer for 20 minutes. Drain the boiling water, immediately fill the pot with cold water and a couple of ice cubes.

If a warm wrap is desired, using the same recently hot burner, toast the wrap directly on the burner.

Peel the eggs and cut in quarters.

Place 4 quarters of egg, half the lettuce, and half the feta on each wrap and season with choice of seasoning.

Drizzle the olive oil on the lettuce. Fold the wrap.
