Mexicali Turkey Skillet

The Mexicali Turkey Skillet is a ‘Mediterraneanized’ Taco Tuesday recipe. I love Taco Tuesday! This one skillet meal takes just 30 minutes to cook. Loaded with veggies, it is a perfect recipe to double for a crowd. The Mexicali Turkey Skillet is hearty like a burrito. By using lean turkey and fresh tomato pulp the dish is lighter. The tomato pulp adds savory flavor and you will never miss the heavy cheese. A touch of real feta adds a creamy saltiness to the skillet. The versatile Mexicali Turkey Skillet is a delicious meal just served on a plate. Adding a crunch, I like to serve it with homemade corn tortilla chips and mixed greens.

TACOS ANYONE?

If you are more of a Taco Tuesday purist, the Mexicali Turkey Skillet is perfect for tacos. Stuff a couple of spoonsful in soft corn shells for the ultimate street taco party. For an even heartier meal, make a burrito in a whole wheat tortilla. Add six ounces of filling to the tortilla, fold and lightly grill on both sides. Top your burrito with salsa, additional Spanish olives, jalapeños and Strained Almond Yogurt. Yum!

I discovered the Mexicali Turkey Skillet when my Sweetheart gave me a cast iron skillet for Christmas. In my teen years, I played an unhappy housewife in a class play. After receiving a skillet as a gift from my husband in the play. I promptly attempted to hit him in the head with it. Unlike in the play, I love when my Sweetheart buys me new items for my kitchen. My cast iron skillet is no exception. It has been inspiring all sorts of new one-skillet dishes, and this is one of my favorites. Maybe my Sweetheart has ulterior motives in gifting me with kitchen gadgets? I think he loves my Mexicali Turkey Skillet even more than I do!

When one thinks of the Mediterranean Diet, Mexicali cuisine may not be the first thought that crosses your mind. I have learned so much on my journey to help my Sweetheart and I live a healthier lifestyle. Most cuisines have dishes easily ‘Mediterraneanized’. Second, eating one of your favorite cuisines should leave you feeling healthy and energized – not bloated and lethargic. It is easy to enjoy wholesome Mediterranean fare simply perfect for a Taco Tuesday with friends and family.

Mexicali Turkey Skillet

Ingredients

1 pound lean ground turkey
1 medium onion, small diced
1 green bell peppers, small diced
1 teaspoon roasted garlic powder
1 teaspoon chili powder (plus more for topping)
1 teaspoon dried cilantro
½ teaspoon ground black pepper
2 cups fresh tomato pulp (or canned tomato puree)
3 ounces feta (crumbled from a block)
1 can (15.5 ounces) of black beans, drained and rinsed
4 ounces black Spanish olives, sliced
2 tablespoons jalapenos, diced
2 Haas avocados
2 scallions, small diced
Strained Almond Yogurt

Instructions

Preheat the oven to 375 degrees.

In a large cast-iron skillet (or a skillet that can go into the oven) brown the ground turkey on medium-heat. Just as the turkey meat has warmed, add the diced onion and green bell pepper. Do not overcook. Stir frequently until the turkey is browned.

In a separate jar, combine the roasted garlic powder, chili powder, cilantro and black pepper. Sprinkle the spices evenly over the turkey. Cook for 1-minute stirring continuously.

Add the tomato pulp to the skillet with the turkey. Turn the heat to medium-low. Bring to a simmering boil.

Add the feta, black-beans, olives and jalapenos to the skillet and place into the oven at 375-degrees. Cook for 5 minutes until bubbling.

While the Mexicali Turkey Skillet is cooking, pit the avocados and slice into 8 slices each. Remove the skillet and stir the turkey mixture. Even out the turkey mixture and place the avocados slices on top clockwise. Return the skillet to the oven for 3-5 minutes until the avocado is warmed.

Take out of the oven. Allow to cool for 5 minutes. If making the Toasted Corn Chips, this is a perfect time to brown them in the oven.

After cooled, top with Strained Almond Yogurt and sprinkle liberally with the scallions and chili powder.

Serve family style with mixed greens and toasted corn chips or use for tacos or burritos!
