Easy and Beautiful Breakfast Pizza is the complete meal. Warm crusty bread, eggs, vegetables and a dash of goat cheese wakes up the tastes buds and leaves you feeling satisfied not stuffed.
Pizza as a Food Group
I am so grateful that pizza is included on the Mediterranean Diet. Pizza should be its own food group. I only allow myself pizza a couple of times a month because portion control has very little meaning to me when eating pizza. I often make pizza when friends are over because I have to share and cannot over indulge. Worthy of its own food group, I also believe pizza can be served at any time of the time. One of my favorite pizzas to share is my Easy and Beautiful Breakfast Pizza. This is the perfect breakfast to have when you have overnight guests. Why? Well, because it is easy to prep ahead of time and it looks bright and beautiful sitting on your table when your guests wake up.
Easy to Prep Ahead
When I have house guests it is important to me that I serve delicious and Mediterranean Diet meals. It makes me happy to serve friends and family food they enjoy, but is also good for them. Even though I want to serve delicious and freshly prepared food, I do not want to spend my entire day in the kitchen away from my guests. This is why meals like the Easy and Beautiful Breakfast Pizza are perfect when hosting overnight guests. You can used a make-ahead pizza dough, or even store bought, and prep the vegetables a day or two before. These shortcuts makes preparation in the morning simple. Simply roll out your dough, add the toppings, and before you know it your guests will be waking up to the smell of warm crispy bread covered in Mediterranean goodness.
You can use whatever type of pizza dough you have on hand. I try to have a few rounds of homemade dough in the freezer. To defrost I put it in the fridge the previous day. In the morning, about thirty minutes to an hour before rolling it out, I place it on the counter to rise. I typically wake up and pull the dough out before I get in the shower. It is ready for me when I am dressed.
The Mediterranean Diet focuses on whole grains, so it is best to use wheat bread. I often use King Arthur White Whole Wheat Multi Purpose Flour for the Easy and Beautiful Breakfast Pizza. It is fine to use store bought wheat pizza dough as well. If you do use store bought I would suggest using the dough fresh from the bakery as there seems to be fewer preservatives.
An Easy & Beautiful Brunch Worthy Pizza
This simple breakfast pizza could be served just with a piping-hot pot of coffee and it would be amazing. I usually put out a bowl of fresh fruit with honey and mint, and some Greek Strained Almond Yogurt or Sourdough Blueberry Granola Bars. Now I have a brunch worthy breakfast. The best part is it is quick to put together yet my guests will still benefit from all of the goodness of freshly cooked, good-for-them food.
My favorite time to blog is early in the morning, when it is still dark out before my Sweetheart wakes up. He lets me know he is awake by bringing my first cup of coffee into the office. I know that seems very sweet. It is sweet to bring me coffee to my office. It is also a not-so-subtle cue that he is ready for breakfast. Today, as usual, I am writing in the quiet of the house. What may be different today is just writing this blog recipe has my mouth salivating. I may have to depart from tradition and make my Easy and Beautiful Breakfast Pizza without guests, and before coffee. Good thing I am flexible!

Instructions
The day before. Place pizza dough lightly oiled and wrapped in plastic wrap in refrigerator.
Prepare the Vegetables 1-2 days prior. Heat 1 tablespoon of EVOO in skillet and saute the mushrooms, stirring sporadically. Once mushrooms have browned add a touch more of EVOO and the garlic cloves and saute for 1-2 minutes, stirring continuously. Remove from heat. Measure and prepare the rest of the vegetables, spinach, tomatoes, olives and onions and store in individual bowls or baggies to make morning preparation easy.
In the Morning Preheat the oven to 425 degrees. Lightly a deep baking sheet with EVOO.
Flour counter surface lightly with all purpose flour. Roll the dough out to a rectangle and slide onto pan. Using the palms of your hands push the dough from the middle to the edges of the pan. Using your fingers create a 1 inch border around the pizza with the dough and fold it over to thicken it.
Pour the beaten eggs onto the dough. Add the vegetables on top of the egg mixture starting with the Spinach. Be sure to distribute the ingredients out evenly. Sprinkle with goat cheese and the sprigs of oregano.
Place in the oven and cook for 20 minutes, or until eggs are set and crust is golden brown.
Transfer to cutting board. Cut with a pizza cutter into 8 pieces. Serve.
I use a 10 x 15 baking pan. A larger pan will yield a thinner pizza, a smaller pan a thicker pizza. There is not a wrong way!
Funny, this morning I made something of a pizza breakfast. I had pizza last night. So I left off the bread this morning. Then I read this post. I will do this one early next month with all the good foods listed here.

Looks awesome. Since I’m not a goat cheese fan, what cheese could I substitute that would compliment but not completely change the taste you were going for.

Sorry for my delayed response! Blame it on the holidays. Feta would be perfect. Shredded asiago, while not on the Mediterranean Diet, would add a nice salty creaminess too. Let me know what you figure out!
