Wheat Waffles Made with Sourdough

Sourdough Wheat Waffles

Making sourdough wheat waffles is the perfect way to use the discard from your sourdough starter. These are vegan, quick and delicious. Sourdough is wild yeast cultivated from the air. If you already have the sourdough starter ready, the other ingredients are readily found in most pantries and can be whipped up without much planning. The perfect breakfast to serve hungry grandkids or a special brunch for friends. These tangy waffles are the perfect compliment to sweet summertime fruit and real maple syrup. I love these waffles. They are vegan which makes them even easier to invite friends over for brunch.

Real Maple Syrup on Wild Yeast Waffles

Wild Yeast Wheat Waffles are Mediterranean Diet compliant. Be sure not to eat them every day! The weekends are a perfect time to enjoy an indulgence. Waffles on a Sunday with a cup of steaming hot coffee and a plate of fresh fruit is ideal.

Moderation is key on this way of eating and portion control is very important. I make the full recipe and flash freeze the leftovers. Store them in individual storage bags in the freezer for up to 4 months. I store them individually and pop one into the toaster on super busy mornings to have as a filling and quick breakfast. Eat the toasted waffles plain or with a nut butter on top for an on-the-go breakfast idea.

Spices

Spices are a big part of the Mediterranean Diet. Some spices will boost weight loss efforts. I try to use these weight loss boosting spices regularly in my diet. Spices, especially cinnamon, can have tremendous variety and brands are not created equally. Be adventurous with your spices and try different kinds. Vietnamese Cinnamon is a strong and sweet spice which wakes up the fruit and tickles the tongue. Eating food not drowning in fat, sugar, and salt allows other flavors to become prominent – another benefit of the Mediterranean Diet.

Wheat Waffles Made with Sourdough

Ingredients

Dry Ingredients

2 cup of whole wheat flour
1 cup of all purpose flour
3 teaspoons of baking powder
1 heaping teaspoon of salt

Wet Ingredients

2 cups of almond or other plant based milk, (unsweetened). Reserve extra if needed.
4 ounces of unsweetened applesauce
1 tablespoon of real maple syrup
1 tablespoon of vanilla
2 tablespoon of olive oil
1 cup of whole wheat sourdough starter
Suggested toppings: Real fruit, cinnamon, and real maple syrup.

Instructions

Turn on the waffle maker grill and spritz with olive oil

Whisk the dry ingredients in a large mixing bowl.

In a separate bowl mix the unsweetened almond milk, syrup, applesauce, vanilla, and olive oil.

Add the liquid ingredients to the dry ingredients, blend well. Fold in the whole wheat sourdough starter until combined.

If the batter appears too thick add another .25 cup of almond milk.

When the waffle maker indicator is set to ready, pour the batter unto the waffle maker. The batter yields 12 waffles.

Top with toppings of your choice.
