King Crab Spring Rolls

King Crab Spring Rolls are one of my favorite MediterrAsian recipes. Mediterranean Diet compliant, this dish is simplicity at its finest. Rice paper wrappers, cabbage, carrots, avocado and of course tons of sweet King Crab. It is the perfect dish to reach for if you are craving food from the Far East!

I love to have dinner parties featuring various cuisines. I make sure to keep the menu healthy and as close to the Mediterranean Diet as possible. Planning my Asian inspired dinner party, I made a Pinterest folder entitled MediterrAsian. I had no idea that the term MediterrAsian was not just something clever I created, but it was actually already a coined term. When I use the term, I am blending the principles of the Mediterranean Diet with Asian recipes. It is this blend that inspired me to make King Crab Spring Rolls!

Healthier Than Store Bought

When I use to live in Key West, prior to starting the Mediterranean Diet I often ate spring rolls made at a local grocery store downtown. As I was running errands, it was easy to run in a grab a quick lunch to eat outside and people watch. It was simple and fresh – or so I thought. Reading the label though my Mediterranean Diet lens I quickly put the package down. Store-bought spring rolls are full of fake crab meat, additives and unnecessary ingredients like mayonnaise (just why?).

Since reading the ingredients, I have not been able to enjoy spring rolls until inspiration hit. Seeing the King Crab for sale on Vickie’s Facebook page (check her out if you live in the Treasure Coast), I saw myself making my own delicious spring rolls. All this succulent taste and it is healthy? Yes, please!

King Crab Spring Rolls are part of my new MediterrAsian recipe series. These Mediterraneanized recipes are not a regular choice at my house. The Mediterranean Diet features foods eaten in countries that border the Mediterranean Sea. The Mediterranean Diet emphasizes fruits, vegetables, whole grains, Olive oil, beans, legumes, nuts, herbs and spices with fish and seafood. Once or twice a month I explore different cuisine that I have adapted to fit the guidelines of the Mediterranean Diet way of eating. My MediterrAsian King Crab Spring Rolls are a delicious exploration!

King Crab Spring Rolls Mediterrasian

Ingredients

4-5 lbs of KIng Crab Legs (Snow Crab will work too – it just won’t be as sweet). The crab legs are usually precooked. Thaw (if needed) and pull the meat out. Use a pair of Kitchen Shears to cut the legs.
1/4 head of cabbage, thinly chopped
3 carrots (A vegetable peeler will yield super thin slices)
2 Avocados, cut each into 8 slices
8-10 rice paper wrappers (you may only use 8 depending on the available amount of crab meat).
Optional dipping sauces: Healthier choices for dipping sauces include Bragg’s Liquid Aminos instead of high sodium Soy sauce and spicy Sriracha instead of sugar-filled Duck sauce.

Instructions

Place all of the ingredients assembly style on a large workspace. Be sure to work with one rice wrapper at a time, filling it and wrapping it before you begin the next one.

Wet the rice paper to make them pliable following the directions on the package. Place on a smooth surface like a plate once wet.

Filling one rice wrapper at a time, layer the ingredients into the center making sure it is not too heavy. Fold the wet wrapped neatly around the filling tucking in the ends.

Enjoy immediately or refrigerate in an air tight container for up to 24 hours.

The majority of time is spent cracking the shells and getting the crab meat out. When buying the rice paper wrappers, look for ingredients consisting of only rice paper, water and salt.
