Spicy Lemongrass and Shrimp Vegetable Pho

Spicy Lemongrass and Shrimp Vegetable Pho with king prawns and brown rice noodles is a delicious as it is healthy. Who knew Pho could be Mediterranean? I did! Building on the best principles of the Mediterranean Diet, this Mediterrasian soup has a ton of taste, because of the tang of the lemongrass and spicy hot chili paste. Pho is a Vietnamese soup. Because of the noodles, it eats like a meal. Traditionally Pho is made with a beef stock with more beef or chicken added to it. I love to have dinner parties featuring various cuisines from around the world. I make sure to keep the menu healthy and as close to the Mediterranean Diet as possible. Planning my Asian inspired dinner party, I made a Pinterest folder entitled MediterrAsian. Then I learned, MediterrAsian is not a term I cleverly created, but it is actually already an established term. Who knew? When I use the term, I am blending the principles of the Mediterranean Diet with Asian recipes. What that means, I am taking popular Asian recipes and converting them as closely as possible to the Mediterranean Diet.

Looking at the photos of my Spicy Lemongrass and Shrimp Vegetable Pho, one may notice some additions. In addition to regular shrimp, I added King Prawns! Not only are they so sweet and decadent, they are beautiful to use when entertaining. King Prawns are not always readily available, so lobster tails would work! I promise, this Pho is so delicious and hearty adding the shrimp called for in the recipe is enough.

Spicy Lemongrass and Shrimp Vegetable Pho takes a little prep to cut everything up and be sure to add it in the order prescribed. But it is hard to mess this one up. Why? Because, it is just a big ole’ bowl of soup. The only thing to watch are the noodles. Brown rice noodles are in full compliance with the Mediterranean Diet. Because they cook in a hurry, add them just as you are getting ready to serve the meal. They only take about a minute to cook. I hope you enjoy this Mediterrasian dish as much as we do!

Spicy Lemongrass and Shrimp Pho Mediterrasian

Ingredients

1 tablespoon extra virgin olive oil
1.5 large onions thinly sliced, cut bite-sized
16 ounces mixed mushrooms (such as cremini, shiitake, baby portabellas)
3 tablespoons lemongrass paste, or minced fresh lemongrass
2 tablespoons fresh ginger root, peeled and minced
2 teaspoons hot chili paste (sambal oelek or gochujang)
2 tablespoons garlic, minced
3 large red bell peppers, seeded and julienned, cut into bite-sized pieces
16 ounces canned water chestnuts, halved or pieces
8 cups low sodium vegetable broth
4 cups of water
1.5 pounds shrimp, peeled and deveined Optional ingredients: 2-3 King Prawns (leave tail shell on for visual effect) or 1-2 small lobster tails
3 cups bok choy, thinly sliced
1.5 tablespoon coconut amino, or tamari (soy alternatives)
The juice of one lime
Brown Rice Noodles (Vietnamese) – see note for portions
Suggested toppings: fresh cilantro, chopped scallions, and slices of lime

Instructions

Heat olive oil in a large stock pot on medium-high heat. Add onions, cook for 2-3 minutes, then add mushrooms and stir frequently until they are soft.

Add the lemongrass, ginger, chili paste and garlic for one minute, stirring continuously.

Add red bell peppers, water chestnuts, vegetable broth, and water and bring to a boil.

Add shrimp, bok choy, amino (or tamari). Reduce heat to simmer. Cook for 4-5 minutes or until shrimp are cooked through.

Add the lime juice, stir. Add the desired amount of noodles (see note below). Cook on low for 1-2 two minutes. Remove from heat. Add the toppings and serve immediately.

Usually the noodles come in squares. Add one square for every 2-3 servings right before serving. If planning to use pho as leftovers, do not add until reheating. An 8.6 box is enough for the entire pot of soup.
