Healthy Tuna Noodle Un-Casserole

Olive Sunshine’s Healthy Tuna Noodle Un-casserole is not your grandmother’s calorie laden dish. This dish is Mediterranean Diet friendly, and the ingredients are easily stored in the pantry. It is quick, simple and tasty. Fresh lemon is the only fresh produce I used, but you could use bottled-lemon juice. I always have frozen peas in the freezer. The extra-wide egg noodles make a warm and soothing base for this five minute dish.

The Healthy Tuna Noodle Un-Casserole is a Great Alternative to “Fast Food”

I made the healthy tuna noodle un-casserole out of necessity. It is lighter and tangy, but with the same level of comfort you think of with a casserole. A few months ago I had a family emergency and had to travel out-of-state. While at my mother’s house, the family turned to fast food. Making poor food choices is easy to do during a stressful time. I knew I needed to keep my energy up and eating healthy helps me. I scoured the near empty pantry and was able to pull together a tasty and Mediterranean compliant dinner.

Even when life is challenging, I deserve to value myself, my health, and my well-being. During this family emergency I learned three important lessons:

  1. It is important to maintain our eating habits even when things are not normal.
  2. Cooking can create a sense of comfort.
  3.  I can follow the Mediterranean Diet even if I do not have much time. 

Recently I had a really long day at wok. I had planned to make a pretty time-consuming recipe for dinner that night. That is when I remembered my healthy tuna noodle un-casserole and it was as quick, easy and tasty as I had remembered. My Sweetheart enjoyed it and went back for seconds.

We All Need Simple and Healthy Meals

I debated about posting this recipe. It is not complex. I have many other dishes that I like better. Why am I sharing this on my blog? Everyone should have simple and healthy meal ideas that are easy to pull together. Even better if the items in the meal are inexpensive and readily available in your pantry.

Too often I see friends eat food they do not enjoy. They pull into the drive-through window, or microwave an overly processed frozen meal. It is not what they intend to do. They do it because they are overwhelmed and busy. According to Ann Pietrangelo on Healthline, “In comparison to 40 years ago, the average American family now spends half their food budget on restaurant food. In 1977, just under 38 percent of family food budgets were spent eating outside the home.”

If any of my Olive Sunshine readers feel busy, I suggest you tuck this recipe away. You deserve to value yourself, your health and your well-being. These are the reasons. If you only have five minutes to make a meal, and an empty refrigerator, the Healthy Tuna Un-Casserole can be a quick, healthy and tasty solution.

Lessons Learned Tuna Casserole

Ingredients

3-4 ounces of extra-wide egg noodles (wheat).
1 cup of frozen peas.
2 tablespoons of extra virgin olive oil.
The juice of one lemon.
10 ounces of canned tuna (packed in water).
Fresh ground black pepper.
Optional: Top with sprinkle of pecorino (or parmesans) cheese.

Instructions

Cook the noodles according to the packaged directions.

While the pasta is cooking. Prepare the other ingredients. Microwave the peas. Combine the extra virgin olive oil and lemon. Open the cans of tuna, drain.

Drain the noodles, return to the pan and add the peas, the blended olive oil and lemon dressing, and the tuna. Gently fold the ingredients together.

Divide into two dishes, add black pepper and optional toppings as desired and serve.

    Did this dish last week, the last of June 23. The only thing I did different was throw the peas in with the noodles the last two minutes of cooking time.
